Spinach Quiche

1 cup plain flour

2 oz butter

1 egg yolk

Squeeze of lemon juice

2-3 teaspoons cold water

½ teaspoon salt

Sieve flour into mixing bowl.  Rub butter into flour, until the mixture resembles breadcrumbs.

Mix egg yolk, lemon juice, water and salt together, add to flour and mix with a round bladed knife until the mixture holds together.   (Add extra water to bind if needed). Work mixture into a flan dish.   This is quite tricky as there never seems to be enough mixture but if you just keep working the mixture it does cover the dish and the sides.  Prick bottom of flan and line inside with a circle of glad bake paper.   Bake on the middle shelf in a moderate hot oven for 15-20 minutes.  The pastry should not be brown just cooked.

For Filling

1 packet of frozen spinach defrosted and water squeezed out)

300 mil bottle of cream

2 eggs

1 ounce butter melted

Ground pepper

½ teaspoon sugar

Grated cheese


Combine all ingredients together except cheese pour into cooked flan case and sprinkle with enough grated cheese to cover top.   Bake on middle shelf of a moderately hot oven until cooked about 15-20 minutes.
