250g swirl pasta

2 tsp oil

1 tsp garlic paste

6 x mushrooms sliced

2 x spring onions chopped

12 x small baby tomatoes cut in half

150g spinach

20 g basil fresh

140 g tomato paste

½ cup water

Handful of olives

Pepper and Salt

70 g parmesan

Chopped continental parsley

Lemon Juice

Cook the pasta as per the packet, drain and put aside to cool.

Place the oil in a large frying pan and cook the garlic, mushrooms, spring onions and cook for 1 minute. Add baby tomatoes, spinach, fresh basil, tomato paste, water and stir to mix.  Then add pasta and thoroughly work thru the vegetables.  Mix in a handful of olives, pepper and salt. Decorate top with parmesan and continental parsley.   Sprinkle lemon juice.

You can add also slices of cooked chicken if required.
