375 Linguini
1 tablespoon oil
1 red onion
1 garlic crushed
175 g mascarpone
250 ml thin cream
500 g smoked salmon cut finely
1 x 80 g baby rocket
2 tablespoons capers
1 tablespoon dill
Salt and pepper
Cook the pasta as per packet instructions.
Heat oil, fry onion and garlic till soft. Add mascarpone and cream.
Add pasta, baby rocket, capers, dill, salt and pepper and smoked salmon.
Serve.
