1 ½ cups plain flour

125 g butter chilled cubed

2 tablespoons icing sugar

1 egg yolk

1 tablespoon water

3 cups mixed fresh berries of choice

¼ cup icing sugar

1 teaspoon grated orange zest

½ teaspoon ground cinnamon

1 egg white lightly beaten

Preheat oven to moderate 180 C

Place flour, butter, and icing sugar in a food processor.  Process until crumbly.  Add yolk and water, processing until dough comes together around the blade.

Lift pastry dough onto a sheet of baking paper.  Roll out to about a 30 cm circle.  Cover with plastic wrap and chill for 10 minutes.

Place berries in a bowl.  Sprinkle with sugar, zest, and cinnamon.  Mix well.

Lift pastry (still on baking paper) onto an oven tray.  Lightly brush the centre of the pastry with egg white.  Pile berries in the centre, in about a 20 cm circle.  Fold edges of pastry over filling leaving the centre uncovered.

Bake for 30-35 minutes.  Cut into wedges and serve with whipped cream or ice cream.
