500 g of beef mince500 g of sausage meat
1 cup soft breadcrumbs
1 onion grated
115 g grated cheese
½ teaspoon curry powder
1 x 400 g tin apricot halves
Combine mince, sausage meat, breadcrumbs, onion, half the cheese, curry powder, egg, salt and pepper.
Drain apricots halves and reserve 6 for the top of the meatloaf. Add remainder to meat mixture. (I like to chop the apricot halves up before I put them into the meat mixture).
Place in loaf tin and arrange apricot halves on top. Sprinkle with remaining cheese and bake at 180 C for 1 ½ hours.
