1 tablespoon plain flour

1 tablespoon butter

200 mils milk

Dash Dijon mustard and nutmeg

Melt the butter and add the flour slowly.  Then add the milk very slowly so you create a very smooth sauce.  Add a dash mustard and a dash of nutmeg.  Put aside.

Bread Slices x 12

Ham sliced finely

Egg x 12

Grease a patty pan tin.   Cut the crusts off the bread slices and push them into the tin.

Put a dab of the sauce on the bottom of the bread, add chopped ham and a whole egg and cook in oven 180 C for at least 20 minutes or until the egg is cooked.
